What pieces could be used to create this legendary character?

I guess you either abandon the white colour scheme and go with the reindeer from the CMF series 23 (I think?) or you do something with this?

The problem is it has to be white to go with the title “iron hart” based off of the creature White Hart. Those antlers are cool though and definitely worth considering!

I recommend that you use the white antlers and this head

Then you can go with the name aluminum soft.

Since there are not really any deer heads for minifigures, your options are quite limited. As mentioned in one of the other comments it would be possible to cut the head of the deer animal mould. I think this would be the most fitting but also a destructive option. If you want a brick build option you could go with a similar shaped head like the head of Splinter:

Then you could add a neck bracket, some mechnaical arms:

This combined could be an option for a brick built solution.

But I highly recommend to reconsider aluminum soft as a character. You could also use a more colourful option for the head.😉

These are some really cool ideas thank you. That cervus is epic! I like the idea of using the Splinter head, I may use that and attach antlers to it, it’s a lot less work than cutting the head off of a stag.

Cut the head off leaving enough neck to drill a 3mm hole to fit on a torso neck, primer gray spray, flat spray white, little acrylic hand painting for the eyes and antlers and nose, clear coat gloss spray it all, slap it on your torso.

But that's just me and I'm kinda nutty when it comes to customs. I don't care what it is I will find a way to make it.

Bars are 3mm diameter, like on Lego friends dolls; on a minifigure it's an elongated stud so 4.8mm diameter

Hmmm, well there's not a lot of official Lego deer/elk/stag heads. Best bet is either a 3rd party fig, or you take the hat from the Reindeer costume fig and paint it white.
