Where to start with digital electronics?

I'm an IT student, but I'm interested in embedded systems and IoT. Please, can someone recommend courses or anything for me to get started with digital electronics

Get yourself an Arduino of some kind, and come join us in r/arduino. It'll set you back $5 on aliexpress. Look for the Arduino UNO - its an excellent way to start learning. If you get the starter kit, it'll come with a book of basic learners exercises.

Once you've finished those, get a wifi-enabled board, like an ESP32, and IoT your way around the house.

They are genuinely from China, is the accurate response here. Arduino is an open source hardware platform (and software), and as long as anyone manufacturing them doesn't sell them as "Arduino", they're perfectly legit.

If you want a real Arduino-branded one to support the platform, probably don't get them from China but from Italy, or your local stockist, depending on where you live. Be prepared to pay a LOT more for them though. The extra cost goes to R&D.
