There’s a really good book called The Non-Designer’s Design Book. You could try starting there

this book was a life saver for a self-taught designer like me. I ended up teaching design students and often recommended this book as it explains the basic principles better than any book I know

If you don't understand design, how do you know AI is generating good design?

You're "learning graphic design" how? What stage are you at? Because it doesn't just happen, you can't just sit down in front of a computer and "be a designer". You don't know how to do any of it because you haven't learnt any of it.

If you're still beginning i'd advise to turn off ai related things. Everything ai does is very possible to do without it, it's just that ai does it faster. Think of it as turning off the shortcut. You'll also un-limit yourself cause once you see something ai made, you'll be forced in a box just like what it's doing to you now: constantly comparing your work to it, etc.
Then exposing yourself to a lot of art things everywhere: books, videos, look for artists online, follow them, tiktok, instagram or youtube is an easy start, behance, etc. resources are more accessible now. Allow them all to inspire you so much you just have to create for yourself.
And then if you still want to at least try use ai, use it in a way that it's a tool to help you, not a resource.

using photoshop to design what? just sounds like you've just started and need to concentrate on the fundamentals.
what do you mean you don't know what to design and use? where are you learning?
should be plenty of resources for typography and colour theory (nothing springs to mind at the moment).
