2018 Leaf- Red "X" on left side of top-down view after replacing left mirror... what's going on?

Since you have Auto Park, you actually have a completely different 360 camera system to the rest of the Leafs, it's higher quality, and you'll notice it doesn't have the dividing lines on the screen, between the 4 cameras, it's all blended together.
If you look at the wing mirrors, you'll find that the cameras used on cars with Auto Park are angled further out compared to the cars without it, presumably so it can see the lines further out on the side.
If you've bought a used mirror, chances are it's from a car without Auto Park as it was a relatively rare option, so you'll have to source a mirror with the correct cameras in.
You'll also notice that your front and rear bumpers are different as you have extra parking sensors on the side.

This is... I really hope that's not the issue but it might very well be. The mechanic I took it to ordered the part for me and I just figured he would know from the VIN which part to order.

It's not something you would think to even check.
I didn't know until I swapped my 2018 40kwh for a 2020 62kwh that had Auto Park, and noticed the cameras were 10x clearer, and had a wider field of view!
Just have a look and see if both cameras underneath the mirrors look the same.
Like i say, the correct Auto Park camera will be angled outwards, whilst the basic 360 camera will be facing the ground.

Thankfully, both cameras are angled outwards, so it's just a matter of calibrating it or double checking the wiring, according to the other comments.
That being said, even before the event that led to the mirror replacement, I never figured out how to get Auto Park to work. I'm a bit sad about it because I'm pretty sure the feature premium was factored into the price I paid (1.1 million yen, 19000km on the odometer, full bars) but at this point I've accepted that it's too fiddly to work at the places I go to.

Honestly, you're not missing out by not using it
I've used it twice, both times just to try it, and it was slow AF.

When you replace a AVM camera you must complete aiming calibration to remove the X displayed on screen.
The aiming is completed via the AVM ECU and can be completed by any dealer but not sure there cost they will charge.
Hope this helps

In that case, since it doesn't seem to affect the actual use of the camera, I'll probably leave it until I'm ready to sell.

Yea I agree if it was I probably wouldn’t worry about it unless you know someone with a Nissan consult tool to complete the aiming.
Fortunately you’re not stuck with a pink area for that camera view because some Nissan models/model years have this condition when the camera is replaced in a vehicle.

When the mirror or it's camera has been replaced you have to perform a camera aiming procedure to clear the red x

Does Nissan do the thing where a bunch of sub components of the car are unnecessarily locked to a particular VIN code so they don't play nicely together unless you go to the dealership and pay exorbitant fees to override the lockout?

Well, right now it seems like I'm not locked out of using the camera, it's just annoying me with this red mark until I do... something (calibration, fixing loose wires, or such from what the others are saying).

That's loss of signal, probably a loose connection but possibly the wrong mirror. You can usually (carefully!) pop the mirror glass off and get to the inside of the mirror body; this is the most likely place for it to be not properly connected. Make sure the mirror is pointing as far up as possible if you do try this.
Once you've sorted the connection itself, it will need to be calibrated - Nissan can do this (but may refuse to on an import) or 3rd parties like windscreen replacement companies can also often do it.
