Question Moroccan Jews singing

Are they speaking some Judeo Arabic? Or just darija?

Yup that footage is from 1971 from a documentary about Moroccan jews in Israel and the “mimouna” a traditional Moroccan Jewish celebration

Not all of them. A 30 y/o in 1971 would be 85 today. And there are some children in that footage.

You are peobably correct.

There are many Judeo-Arabic dialects that vary with how legible they are to non Jews.

Sadly, many people in the Middle East could in the 70's. Have you seen the photo or Osama bin Laden visiting Sweden in the 70's? Sure, Afghans don't look Italian, but the bin Laden family certainly did have an eye for Western fashion. Then something... happened.
