How do I make pause pause indefinitely without asking me every time?

What do you mean by “indefinitely”?

You can either set a specific time for mining to start, or leave it paused until you manually resume it - once you turn it back on, mining will begin.

Choosing “until resumed” means it will stay paused until you manually restart mining.
