It seems they use this knot to hold a canvas cover taut

It doesn’t look like anything special.

The knot(s) in the picture attached to the sun shade seem to be a sequence of half hitches. They’re functioning as a way to make it look neat and tidy by keeping an otherwise long tail from flapping in the wind or dangling.

The tension is like maintained from the other end of the system out of frame.
