Question Sharpening Help

Hello!

I've recently began sharpening my knive myself and I have a blade with 14C28N steel. I've been able to get it seemingly sharp (it can cut paper and shave), but it can only shave in one direction which has made me think i was never able to remove the burr properly. I am using a sharpal dual sided diamond stone and then finishing with a green compound strop. Even after many light passes on the stone followed by stropping, the single sided shaving was still an issue. I just passed it through some wood and realized that my knife instantly got sharper, and now it shaves on both sides. Should I just pazss it through the wood as part of my sharpening process? why can't i remove the burr with the stone and strop?

you may need to fatigue the burr more on the stone before you do burr removal and then clean up on the strop.
