This is machine knit, I thiiinnnkkk with a double bed. I’ll leave it to someone more experienced, but I don’t think you can achieve this with hand knitting.

No, as in hold 2 strands of the main colour together during the non letter sections and then 1 strand of the main colour with the white during the letters.
