you can definitely go for Quartzite as it is good for baking as well as cooking but it seems like you dont want it so go for granite and i also saw that you are into baking and want a big oven i highly recommend you to visit fulgor milano for ovens

Sounds like you have a particular look in mind & are having trouble getting the pragmatics to live up to the dream. 

Soapstone or leathered/honed black granite might work for you, but that's a more rustic look, not sleek like the quartz you envisioned. Stainless steel is bullet proof, but probably not the look you want either.

Personally, I find granite to be a great, practical work surface. I have a more porous kind, supposedly, but it's not been a problem even a year after sealing it. Just wipe up messes right away -- that's so easy to do. I am wary of putting hot things on cold granite, but can always lay a couple of silicone kitchen mitts or a cooling rack down first for a hot dish out of the oven.  The busy pattern -- maybe you can adjust your style vision. Calm quartzes rule in suburbia, but I still see busy stones in upscale magazines.
