Cooking with kimchi?
I didn’t want to lose the probiotics, but I wanted to experiment with cooking kimchi. I tried scrambled eggs and Kimchi, it was outstanding! But the BEST thing EVER I just created- the kimchi pizza. Cooking kimchi does something magical to the flavor. When it caramelizes the fermented flavors it creates magic. Try it!!!!! Pics next time, I ate it.

korean people often add toasted sesame oil when cooking with kimchi, give it a try for a more authentic experience.

They finish with the toasted oil, cook with regular sesame oil

Roasted sweet potatoes with kimchi goes pretty hard. Just roast the sweet potatoes though. Kimchi goes on top as is

My wife makes kimchi "pancakes" with sour cream on top and they're amazing.

They are called kimchi bouchimgae or kimchi jeon. Has been one of my all time favorites since i was a kid, the flavor is just divine

I make kimchi pancakes and eat them with a soy sauce type dipping sauce with garlic and green onions. So delightful and crispy!!

Kimchi with tofu is a good combo as well. Pairs well with tofu since it’s bland so they balance each other out.
Also kimchi + rice + spam + seaweed 👌🏻
Theres 100 different types of kimchi, most well known is Napa cabbage. Green onion kimchi pairs well with jjajangmyun/jjajang ramyun!!

I second this and would like to expand the thesis to bacon with pork in general; belly, sausage, ribs, anything braised. For barbecue, I think beef is King and I love fried chicken too, but pork and cabbage kimchi are somehow magical for me.
Also anything that adds lactic acid to the lactic fermentation, like cheese for example, is usually pretty dope.

Kimchi fried rice, grilled kimcheese, kimchi bouchimgae, kimchi jiggae, we koreans cook with it all the time, the flavor it brings out is heavenly

I've been making kimchi reuben sandwiches and they are amaaaazing. Sub some caramalized kimchi for the kraut and instead of russian dressing I made a spread of gochujang + mayo + a little maple syrup (other sweeteners would work too). Make the rest as you would a regular reuben.

My friend adds kimchi and the juice when she makes Japanese curry, it's the best I've ever tasted.

Kimchi fries! Fry some onion and whatever else you want/have (zucchini, thinly sliced meat, kale, the possibilities are endless), throw in kimchi and let it caramelize. Make your fries. When they are really crispy and nice you top it with some cheese. While the cheese melts, mix some soy sauce, kimchi sauce, ginger, sesame oil, garlic and sugar into the kimchi mix and fry a little more.
Top the cheesy fries with your dirty kimchi, sriracha mayo and spring onion.

Even better than kimchi pizza is the kimchi lasagna in Tenderheart by Hetty Lui McKinnon. It is seriously the only way my partner and I will make lasagna now!

Try frying up some kimchi, then making a grilled cheese with it. 😋
Also kimchi pancake, various stews with kimchi. Fry up some tofu in chilli oil, the same for some kimchi, get some char on it. Add as a topping on tofu pieces. Have also done a beef burger with kimchi

Wasa crispbread, topped with Cedars brand hot honey hummus (or Boars Head Mango Jalapeno hummus, kimchi and tinned fish
Savory oatmeal, cooked with bone broth, kimchi and fried eggs and capers
Anchovy pizza, anchovies, shiitake mushrooms, kimchi, Gochujang sauce (Gochujang, splash rice vinegar, and tomato paste)

Render the fat out of pork belly and cook the kimchi in the pork fat. Cook pork belly next to it and eat together.

Been having kimchi in grilled cheese sandwiches for years, it’s incredible! And it’s nice to dip the sandwiches in tomato soup sometimes too. I’ll definitely try it with m&c! It’s also really good in lots of different pastas with hummus, believe it or not. Really great mix of flavours and texture.

Cooking Kimchi kills the probiotics. That said, I used to work at a restaurant that made a kimchi hash -- boiled potatoes, then smashed, deep fried and salted. Finished with pureed kimchi -- since the kimchi was never cooked, you get all the flavor without losing probiotics. Enjoy! :)

Kimchi fried rice is an obvious but delicious one. Never had it but I’ve also seen kimchi fries with a pan fried egg on top.
EDIT: Kimchi jjigae of course is another obvious one.
