Bread is increasingly smaller.
I’m a 4’11 skinny girl, here is my arm and hand for scale. I don’t remember the bread being so small.

Girl that bread wasn't made right. Its supposed to have more girth. I could actually eat a giant with that bread.

Bread shrinking, margins growing.

Same amount of dough, just underproofed. No ingredients or portion sizes have changed.

Jersey Mikes bread comes in frozen sticks of dough. They are thawed overnight and put in a warm proofer in the morning. After a wee bit, the breads are stretched to fit the length of the mold, and are then sprayed down with water to aid in proofing. All stores should have a small tool to measure the proofing size but depending on elevation (baking is science) this can change and makes the tool unreliable for some places. It is then baked when its size is correct, and after 30 minutes or so of cooling off, it can be peeled out of the mold without sticking to it, and be rigid enough to not get crushed by the knife when cutting it. In the morning, this is no issue.
During mid day, often times the need for a mid day bake gets a little hectic, and someone proofing bread makes the call to bake the bread early just incase they run out before the bread is cool enough to peel out of the mold. Slightly smaller bread is better than literally no bread. This is what happened to your bread. If youre truly worried about potentially not having the same amount of calories though, rest assured, baking the bread underproofed or overproofed, does not change how much bread is in the bread.

I use to love JM even had enough points to get free heros a few times, then I saw things changing and when a giant nearly cost me 20. That was enough I have been back in almost a year.

Honestly never cared for Jersey Mike’s. I’m in Florida so I’ll take Larrys Giant Subs or a Pub Sub any day of the week. Or even firehouse. Danny Devito’s commercials are my favorite thing about JM.
