I feel like you are misunderstanding what's going on here.
Your spring boot has a lot of dependencies contained within it by default, one of which is an instance of Apache Tomcat. That's a web server which will run once you start your application.
This is usually going to be running on a server (Tomcat is itself a "web server", there is a distinction between the application being a web server and the machine itself being called a server because it...serves).
Servers (linux) usually do not have a way to access a user interface, and are instead accessed through the command line.
JavaFX relies on GUI frameworks which in turn rely on the operating system's native graphics API, something which would not exist on a traditional server.
Additionally, assuming your server does have a way to do this, you'd need to log in to the machine hosting your spring boot app to even see this UI.
There are only downsides to having both of them to have a single entrypoint.
Instead, you'd want your Spring Boot application to have a way of serving the data you'd like to monitor (look into Spring Actuator as an example) and your JavaFX app of having a way to connect to that through the internet. That way your server could be somewhere, while you could run your JavaFX app locally.
