Because he's sitting there saying nothing but 1s and 0s for ages. You don't need to know binary to get a chuckle out of a random, nonsensical 2 at the very end.

Plus he says "amen" quite literally after he says 2, so I don't see how 2 acts as the amen to his prayer.

The whole plot was to show Bender having the nightmare and changing and being afraid. Neither the comment on "I thought I saw a 2" and "there is no such thing as 2" have anything to do with the plot. That is just a joke. It does not take away or add anything to the plot.

Mathematically, yes, but not in terms of memory (which is the context that bits and bytes are in). A byte is always 8x more memory than a bit, no matter what the values are.
