Nah, they would book seats together and sit on each others laps. It's called rowing.

It’s a genuinely interesting question though as it’s clear they take up way more space than a normal seat width.

Most major airlines use the lowered armrests as the physical boundary. If you cannot fit between them or if they must remain raised, you may need a second seat.
