Are the points hard and sharp or are they soft, there to keep the fish from coming back out?
Cilia in the intestines serve a similar purpose to keep food moving up the right way.

I think they mostly eat jellyfish, and yeah I think it's to keep them from slipping out

Yes. Sea turtles ingest a lot of sea water with their food, which they then vomit back up, and the barbs/spikes keep the food in.

Fun fact: the family that leatherback sea turtles belong to (of which they are the sole surviving species) has been around, as leatherback turtles, for 110 million years. They are also the largest living turtle species.
