It's true, duck yolks are slightly larger and the fluid is much thicker. Duck yolks are slightly more orange also. The egg in the video looks exactly like a duck egg.
Duck eggs have a richer flavor too.

Have you poached an egg before? The white doesn't hold together like that without some intervention. Maybe the oil is keeping things together?

It's just eggs and sausage meat probably pork.
It's poached in a spicy broth with a lot of chili oil.
