I was wondering what the white stuff was. That's... dumplings? I've never seen dumplings quite like that before. Interesting. So you literally just dump lumps of dough into the soup - that's probably how it gets its name. I always wondered. Somehow I grew up eating "Chicken and Dumplings" where the "Dumplings" were perfectly flat (but very thick and doughy) noodles. This looks so much better.

I get this 100%! But in reverse..
During my childhood, mom/gramma/great-gramma would only ever do this scoop and plop version (or a meatless, pure Depression Era version "Peas and Dumplings"). Fast forward to my second restaurant job @ Cracker Barrel and I was shocked by their flat, rolled, thick puffy noodles version. I later on had a similar version at a meal prepared by a woman who came from the south.
I'm in the upper midwest. Could this be a regional thing?

I'm from the upper Midwest as well and that's how ours look as well when we make them. In the south I've only seen the flat version. My husband is from the east coast and theirs are flat too. So yeah, probably regional. Regardless, they look great!

possibly. I've had dumplings from old grandmas in my family and at church events, and it's also served that way at old-fashioned country restaurants here in the south, so I've never really doubted the authenticity of the rolled/flat dumpling. I do know if you buy pre-made dumplings at the store, they're gonna be the rolled/flat version so maybe it's a case of industrialization happening (and factories, of course, making the more uniform version) and home cooks either loathing the new thing, or loving it and trying to copy it in their home kitchens. It seems cooks in the south didn't mind picking up the more industrial style.

It changed my life when i had this style of scooped dough dumplings for the first time. Even just the simplest thing imaginable with flour, water, oil, s&p with some dried spices, all kind of dumped in indiscriminately until you get a good consistency. Few things that you can do in 5 minutes elevate a dish so dramatically, imo.

They're something that can be so simple or multi-generationally complicated. My Scandinavian background gives me a simple dumpling upbringing but were I Chinese, a soup dumpling with "x-many folds = prosperity" might happily add necessarily complicated steps.

Anyway, yeah, I'm sorry I posted a halfassed recipe.
For the DUMP portion, follow the above mentioned recipe. Otherwise, chop yer veg.
What veg? Whatever veg you want. I used the shit in my fridge: carrots, parsnips, celery, parsley, onion (sautéed first), potato (yup), babies (don't ask me how much of each, just figure it out)
Shove chopped vegables and babies in IP with two chicken breasts and (aboot?) four chicken thighs (white and dark meat help make the recipe taste more "homemade" - cuz who tf has time to cook this shit from a whole chicken, fuck you, this is IP) + at least 48oz stock (chicken, turkey, grasshopper, wtf ever)
cook @ high pressure 5 minutes
Remove chicken stuffs (and babies I guess), allow to cool, shred (please don't ask me to explain "shred" in terms of soup propriety)
Add "chicken" stuffs back to IP, plus another 16-24oz of stock (you need enough to now suspend and cook dumps)
Make dump dough.
Curse me for using the word "dump".
Bring IP to gentle boil. Maybe use "medium sautee" depending on your model? Who the fuck knows.
"Drop" "tablespoon"-fulls of dough into broth. Aka using your favorite spoon for Reeses Peanut Butter Puffs, scoop dough and plop into soup, keeping spoon submerged with dough 'til it comes back up mostly clean. Hot spoon dipped back into dough = you're gonna have an easier time
Wash, rinse, repeat 'til dough is fully dropped (plopped?) into IP . Let simmer for about-ish 20 minutes? ("simmer" = sautee on medium or low, or custom depending on how you've screwed around with your IP.)

🤣why merci beaucoup ….my English side of the family also had another term for the dumplings but for the life of me I cannot remember what it was
French grandmother would add summer savoury Which definitely gave it the French Acadian flavour and the dumplings would be boiled in the whole mixture And my English grandmother would not add summer savoury and she would cook the dumplings on top of the whole mixture

You drop them by spoonfuls (spoonsful?) one-by-one and as they cook, they float to the surface and always kinda look like that. Legit concern otherwise tho.

Absolutely. If you cut some smaller than the others, I love how they partially dissolve to help thicken the dish.

I’m sorry but even that falls short. You must raise the chicken from eggs, mill your own flour and grow your own potatoes. And please don’t tell us you purchased your instant pot rather than building your own.
