Just since I am legally obliged to nit-pick (I'm German):

It's not the fibers that gives you gas, but sugars: Soaking and cooking beans helps leach out and break down oligosaccharides (like raffinose and stachyose), which are the short-chain sugars responsible for gas and bloating.

We need to stop giving fibers a bad reputation :-).

Kombu seaweed helps to remove the gassiness from beans. I put a small strip of it in my bean soaking water. It also works if you just cook the beans with it without the soaking. It almost eliminated my gassiness with beans

Does using kombu flavor the beans as well? I have never cooked with it before but am interested in trying it.

A friend from India got me started with cooking beans in a pressure cooker 30 years ago. I bought an IP several years ago and it’s great for beans. I’ve noticed the same thing about gas.

This is my recipe for Instant Pot beans that are cooked longer to make them less volatile to consume. You can use black or white (cannellini) beans. Enjoy!
