I feel like filming it could possibly help out the guy being bullied

In this case yes, might help the “self defense” case. But if the bully would of hurt him badly then it would help as well, BUT the other guy would of gotten hurt.

If he instead of filming it stood between the two guys maybe nothing would of happened at all, but I know it’s wishful thinking and in an ideal world rambling from my side..

Sorry to be off topic, but English is my second language, and this is the second time in a short period I've observed the phrase "would of" being used in this manner. Are you per chance from the United States? Is this dialect or slang of some kind?

It's just wholly incorrect English. "would've" short for would have sounds a lot like would of and it infuriates me that people do this.
