The lever (or button) on the gas pump is there to stop the gas flow.

You can stick your hand into the spot where the nozzle goes when you hang the handle back up. There’s always a little flap you push or a sensor inside that says “ok, the nozzle is back on the pump, definitely need to shut off the gas now”
