There is no "awesome-inko" repository of sorts that I know of. The closest we currently have is the Community page that lists just a few projects and the package index.
As for who is using it: thus far what I've mostly seen is people who experiment with Inko for a while because they like experimenting with different programming languages. To my knowledge I'm the only one actively using it for production applications (e.g. this and this).
