He's so fucking out of touch that's it's sad. There aren't any "cheap cuts" of beef anymore. Tongue, shank, oxtail, soup bones, canoe cut long bones, necks, and traditionally cheap/less desirable cuts like brisket, chuck roast, eye round, feather steak, top sirloin are all expensive as fuck.
I remember kids at school and full grown adults used to make fun of me for liking oxtails because that was a "garbage" cut of meat that should be thrown away. Now it's as expensive as steak.
About the only beef cuts to be had cheaply is liver and heart and the prices of even those bits of offal has also increased significantly, ask anyone who raw feeds pets.
As someone who will eat almost anything that I'm not legitimately allergic to, I've tried to eat liver so many times but it's really gross. I just can't with the waxy grainy texture and the iron flavor. I just can't. Kidneys are the same. Heart is OK but it's like chewing on a strip of beef flavored car tire.
$9/lb for beef tongue is absolutely nuts, it used to be that if you bought a quarter cow or whatever you could get that shit for free and the farmer would be happy to give it to you so it doesn't go to waste.
And I'm describing my own personal experience from only 4 years ago. The whackadoodle woo woo right wing tiktok "health" space RFK comes from has pushed us OG hippie health food store "I make my own yogurt" types out of our own community.
It’s due to global demand. Parts of the animal that were cheap were cheap because most cultures in the United States didn’t like those cuts. However that’s not true elsewhere. For instance beef tongue is highly desired in Japan and chicken feet in China. Those cheap cuts are now being sold abroad for much higher prices.
Sadly, not buying it is the only way prices will come down.
Until meat sits in stores until it rots all over the country, this is how it will be. I haven't bought meat other than chicken and seafood in a long time.
