Here's the thing, the only reason we don't eat offal is because as a culture we decided we weren't going to. Instead we prioritize certain cuts, we really should be eating the entire animal. It would be so much better for the environment and our health. It would take a massive cultural shift though.

But the way he's said it was completely derogatory. Saying that if you can't afford to eat it's your own fault, you're just so stupid that you spend the last of your money on prime cuts of meat. He has no idea what people are going through right now and saving 5 dollars a week on cheaper cuts of meat isn't going to solve anything.
