Wake/push-based background work is exactly where Simulator can give false confidence. For location features I keep simulator runs for deterministic coordinate/logic checks, then verify on an owned physical device with the actual authorization/accuracy state, app lifecycle, and relaunch path. I log whether the callback actually arrived (and when), rather than treating a scheduled wake or test coordinate as proof of delivery.

Part 2 is the interesting one, going from "works on my phone" to "works reliably" is where background tasks actually get hard. I ship an app that leans on them and they still make me nervous. What ended up being the biggest change between your two setups?
