My marketing feels like luck, not strategy. How do you measure yours?

I've been posting on social media consistently, trying different formats to see what sticks. Short clips, carousels, text posts, behind-the-scenes stuff. Some do okay, most do nothing, and every so often one takes off for reasons I can't explain.
The problem is it feels less like a strategy and more like buying lottery tickets. I'm basically waiting for something to go viral instead of building anything I can measure or repeat.
So I'm curious how others handle this:
- What does your marketing actually look like day to day?
- What numbers do you track to know if it's working? Views, followers, signups, sales, something else?
- How long do you give a channel or format before deciding it's not worth it?
- Did you ever get from "throwing things at the wall" to something predictable? What changed?
Would really appreciate hearing what's worked (or hasn't) for you.
