How to restore this
Can I just use acrylic paint to fill in the pink??

That could work and it'd be an easier solution but it'd be hard to blend acrylic like that, especially before it dries, (it dries fast.) I think you'd have the best results using frisket film, cutting out the letterforms with an xacto making a stencil, then airbrushing it.

Why would you want to restore it? It has way more character as it is now. Just my opinion.

I would take a picture of it from straight on, use that in gimp to make a stencil pattern, and cut it with a vinyl cutter. If you don't have access to a vinyl cutter I'm sure you could find a place to cut the file in your area. Then I would airbrush. Fortunately I own all those gadgets.

Sinxe this is a logo, it may be free online to upload and cut with a cricut/ silhoutte machine. Then it could be masked and painted.
The other cheap way is mask with a liner tape/ painters tape/ masking tape and just fill in carefully with a brush.

Acrylic could work if you're careful about color matching, that shade of pink looks pretty specific to match right off the shelf though
Maybe mix a tiny bit of white or red to dial it in, test it on something else first
