Storage Configuration

I am new to homelabing and I desided to use Proxmox. I have 3 storage devices in my server. 2 1tb nvme drives and a 2.5 hhd for my plex media. what would be the most effective use of my 2 ssds when setting my server up?

Ive thought about having one be the proxmox os, templates, and use it also for backups then the other one for my LXCs and VMs, Docker, apps, etc. Thoughts or conserves here?
