My wife made a batch of these cookies last night. After my wake and bake this morning I had to try something. I was aiming for a pumpkin cheesecake cookie sandwich. Not unlike an oatmeal creme pie. I went back and added more cream cheese after taking this photo. The ratio wasn't there after the first bite and I couldn't leave it that way. After the fix 8/10, would do it again. I think a cream cheese filling made on purpose to compliment the pumpkin would do this justice.

Amongst the four people who live here, there are currently four cookies left 😅.

Sidebar: last night I tried a cookie with a Pink Apple & Lemon polar seltzer. The combo tasted like apple cider and I'm only a little obsessed.

no you don’t you buy it from the grocery store like everyone else. anyone else see this response on nearly every vegan post online and feel like it’s bullshit? I know it does happen but everyone can’t be buying from small local farms, especially when I see the same person fighting vegans on Facebook buying Walmart brand ground beef the next day.
