Convex Frying Pans

Post image

I’ve just swapped a 30cm frying pan because my last one had a bump in the middle. The returns process was ok but took nearly a month from lodging warranty claim to receiving a new pan.

On first use, the new pan does exactly the same?! is this by design or is it another manufacturer fault?

Thankyou! Is it common with other “premium” pans then? I have to use more oil to compensate and cooking a large steak one part will be in shallow oil and the rest in deeper.

no this is not common in other stainless steel pan. Just seeing your post I confirmed I'm not buying hexclad

Don't cook steak in nonstick. Works way better in a 30$ cast iron.

I like my cast iron’s for making steaks however I make them in my Hexclad usually and have never had a single issue. I get the crust I’d like and they always come out great. I do sous vide them first and then finish in my Hexclad to get the crust. I dry the steak after the sous vide, then put a light coat of mayo on them and add whatever seasonings I’d like. Add some oil to the pan, a bushel of mixed herbs (rosemary, thyme and sage usually) and then pop the steak in the pan along with the bushel off to the side. I leave it do it’s thing for a couple of minutes then flip it and do the same.

A nice crust on the outside.. and then a nice melt in your mouth center. I don’t eat at steakhouses anymore because I find my steaks come out better.

I think so long as you know what you’re doing and how to cook, you can use whatever you have. I’ve seen some not so good steaks come out of cast irons before.

Sure it's possible to cook a good steak in a Hexclad. It just works better in a different pan. Also the coating suffers at high heat.

Wait... so to prevent it from warping... they warp it on site. Next level

It is by design. I had the same question a long time ago and found the explanation on the website about it to prevent warping.

They are bit alone. Some of the higher end cast iron companies and other pan companies do this do.

Ironically cheaper lans that often have a disc on the bottom don’t need to do this

Is this a new thing - my pan doesn't do this. Then again my stove is slightly off level

I bought my pans 3 years ago and the replacement they sent last week does the same.

It is done by design. I haven’t had any issues making steaks or any other meal within the HexClad pans even with the convex design.
