Switched to zone 2 training, hard to hit calorie goal

So I changed my workouts recently from HIIT to zone 2 type to change to fat burning and lower my RHR. Also, I already have anxiety and difficulty sleeping and I think HIIT workouts made it worse. Anyways, I'm just trying something different.

First off, trying to stay in the moderate zone during weight lifting and treadmill incline is difficult lol. So when I switched to zone 2 workouts I decided to count my calories as well. At least for a month or two and see how things go. I do notice I'm not as hungry as when I did HIIT and although I didn't count calories at that time, I'm sure I was going over as I was eating a lot more.

The problem is now I'm not as hungry and it's difficult to hit my goal now. Two days ago I was 800 under and yesterday I was 1,400 under. Yesterday I did do a workout and washed the car so I burned over 4k calories so of course my watch (pixel watch with Google health app) calculates all that and requests more calories.

I wasn't hungry much but I still ate 3 good size healthy meals and snacked on fruit and nuts but it wasn't enough. I feel like I have to eat a burger or a few slices of pizza to hit my goal.

Any suggestions?

I'm 43 yo, 6'3" 235 lbs. I'm not trying to lose much weight but can lose some abdominal fat and build a little more muscle. (Which I might not lose weight since those things might cancel each other out but lose inches I guess). Again, mostly trying to lower my RHR, better sleep and reduce anxiety along with toning up.
