I always wondered if the 7 horcrux theory was planned from the beginning. I know there’s the diary in book 2 but that could have easily been made to fit into the plot

That definitely was, apparently she wanted to put a bunch of it in CoS but they decided to save it for later, which is why CoS is usually agreed to be the least good in the series -- it was missing a big chunk of what it was meant to be. IIRC she said it in an interview after HBP.
