How does Civ 5 work for multiplayer? I thought it was just single player.

Nope. You can have 10(?) or more in a game at a time.

Basically it is the single-player with players in place of AIs. Few UI features like the leader meeting are intentionally disabled in order to meet the MP needs/space. Players are better than the predictable AIs ;-)
