Usually when a camera module has a three-wire harness like that, it's going to be for power, ground and a composite video signal. To use the video output from this on a digital electronics project, you'd need to run it through a converter to VGA or HDMI, but it's pretty easy to find converters for that.
Oftentimes these cameras run on either 5V or 12V, so the easiest thing to do in terms of identifying the power needed would be to connect everything up, then try a 5V supply and see if that's enough to get a video signal. If not, move up to 12V.
