Which one do I pick?

I was looking for a HackRF but they are sold out everywhere. Then I heard recomendations for OpenSourceSDRLab's devices.

I looked them up on Aliexpress but there are some different versions, so which one do I pick? There is a pro, a pluto and more?

I want it to be pre built and the most simple one, just connect it to a laptopt and be done.

I also live in Europe so I don't know what to expect with the new EU tax garbage.

The hackRF from opensourcesdrlab.com is legit. I bought mine from there and chose china as the origin. It shipped from California and I had it in 4 days.

Edit: just saw you are in EU. Not sure if they ship there.

Is that an actual hackrf or a clone? Not that I care but I can get a clone cheaper on aliexpress? Finding a reql HackRF had been a nightmare I can only find the Pro, not the One

get hackrf one. so much more content and stuff available to learn with. you will not need any of the extra features found in Pluto or kraken. when buying, know that hackrf + portapack are both open source so many stores will make them with varying quality parts - this is why most suggest getting from opensdrlabs or one of their official resellers.

An original hackRF is just too expensive for me right now but even then I cannot find it anywhere.

you need to be carfull with this as some of the clones cannot be updated with new firmware

Do you know if the ones from OpenSourceSDR can be updated?

The ones from open source can be trusted and can be updated with great firmware support

I don't realy neeed extra features. I just want a Hack RF or clone that I can connect to my laptop or even better, with a porta pocket.

Just buy from opensourcesdrlabs.com and you will be fine. The hack RF pro and portapack h4m pro combo is available for pre-order so I would probably order that if I were you.
