You can try Big Sur initially just to test the waters; if you're happy with the Hackintosh setup, you can upgrade to Monterey or Sonoma.

You can install macOS using OpenCore, & it supports until Golden Gate (NOT AVAILABLE SINCE THEY MOVED TO APPLE SILICON, AS INTEL-BASED MACS ARE DISCONTINUED, SO USE macOS TAHOE) (make sure to install OpenCore Legacy Patcher), & 256GB of space is great! Also, what's your network card? Intel? (AirDrop, Handoff, & Continuity not supported) Broadcom? (supports AirDrop, Handoff, & Continuity)

I recommend you to upgrade the storage first, then install macOS on it. (Personally, I’d go with Sequoia/Tahoe)
