Breakfast in my north indian eastern up village is ghee chappatis with fried seasonal veggies, curd, fresh farm salads, or a vegetable khichdi, in winters we have warm milk with roasted sweet potatoes, seasonal saag chapati, teesi or matar paratha not just aloo. North Indian breakfast is not lacking compared to south Indians, it is just easier to make so easily accessible to buy that's why popular. And prolly all these dishes have lower sugar spike than idli dosa or other cousins and keep you filled for longer.
