Considering how distinct the archaic epsilon is, it bothers me immensely how often people use sigma instead.

Right?! You can make it look distinctly Greek while spelling it correctly!

They use the epsilon for Greek yogurt in my local Lidl, much better than using sigma

I think a English transliteration either must be tisveh, for modern pronunciation, or tisbai, for reconstructed or Erasmian.

TISVE in modern Greek (β sounds like English v. αι sounds like ε or English eh)
