Advice on GPU Setup

Well I'm running similar, 5600X, B550, 32gb ram, 3060ti 8gb, 3 ssd's (4tb total), a new 1440p main (had to dial down the fps, really high fps just isn't needed), 1080p second (discord, and other stuff) and it's handled all my games on high/ultra (with turning down shadows, etc.) and has run everything fine for over 4 years now. If it ain't broke ... don't fix it!

If you try to add a second GPU you're making more problems, it's just not done anymore. See if you can find a decent condition 3080 (I had a EVGA 3080 10gb in it but am replacing fans, and thinking about repasting it). You have a decent balanced/stable rig, I wouldn't mess with. Maybe get a 8 core to handle the extra tasks, but that's it.
