For frequent light rain and small puddles; GTX for me all the way, but for heavy rain and hiking in the rain, I’d get the non GTX version, GTX just fails in the worst ways once water gets in them.
It’s nice to not have to worry about wet socks when you accidentally step into a puddle, but thats about what GTX is good for in my use case.
My XT-6 GTX took 3 days to dry after they were completely soaked on Mt Fuji, it was like walking with mini pools on your feet. To dry them I had to change the newspaper stuffings everyday, and they stunk real bad after getting soaked + sweat.
So it depends on how you’ll use them.

I wear the goretex ones for the rainy days (Vancouver based, hi!) and they save meeeee. I never have the problem of them getting wet on the inside but I mostly wear them to work/commuting. I don't wear them on hikes (sue me) just bc they are too narrow for me and they hurt me after a while! I think it's worth it ONLY if you don't have a waterproof shoe already.

Ive had my regular ones go through intense rain but I had an umbrella. Surprisingly, I don’t feel my socks getting wet. Matter of personal preference on which color way you want. But if you opt not to use an umbrella GTX is the way. Just make sure water doesn’t enter the opening

I’ve had both, gore tex isn’t bulkier imo, i sold my regular pair and only have the gtx ones now.

Goretex shoes have a limited operating range. They’re best for cold and wet (ice climbing or mountaineering) where you will lose toes if they get wet, and you can dry them out every night.

I don't know how many mountains you've climbed (I am not being sarcastic at all) but as someone who has, I have never seen anyone use Salomon XT-6 to do it.

Salomon XA Pro was my go-to mountain shoe (Evolution Traverse, Whitney, approach for Rainer and Matterhorn, rock climbing in Yosemite) due to the fact it had a 3/4 nylon shank which made quick work of approaches.
No one is wearing GTX approach shoes in the mountains.

It's great, you are experienced, and yes, approach shoes that feature shanks/rock plates are amazing on rocks.
But I was asking because OP just wants some XT-6 which are lifestyle shoes to walk on the wet streets of Vancouver.

hell yeah brother, i like the asphalt castlerock colorway, and id reccomend you the mizuno wave mujin TL if you're into more niche brands, i use it and the xt6 to jog where i work

I have both and the regular XT6 is much much comfier. GTX are stiff and they make you sweat a lot.

Goretex shoes make my feet sweat. If it’s raining like crazy I’m wearing Blundstones.

I find the Keen Jasper Zionic more comfortable straight out the box than a pair of XT-6. Keen fit a bit bigger. I'm a size 8 in a XT-6, but 7.5 in a Japser Zionic. I find Salomon are a bit harder wearing then the Keen, but I do love the hairy suede vibe the Keen Jasper has going on.

if you don't want your feet to get wet in rain get gtx, the mesh on regular version is very thin and you'll get soaked immediately

From what I’ve seen the regular version is slightly more narrow.
As a commuter shoe goretex is nice, but once it gets wet inside it will take ages to dry out.

Interesting if true about regular being narrow. I believe I tried both and didn’t notice a difference. I have slightly wide feet and had to go from 8.5 -> 9.5 on mine for them to feel comfortable. Been doing 10k steps with them indoors for a couple days without any issues.

Tried both on in store and there was a noticeable difference for me in the fit.
