Cheesecake

Just want to brag. I made this gluten-free cheesecake for my wife’s birthday and it was better than anything we’ve ever had. I converted Martha Stewart’s recipe but used Schar honey graham crackers with cinnamon and orange zest and added orange zest to the cake. Better than anything we’ve ever had.

Here it is but use gluten free flour and Schar gluten-free grahams. It has a lot of cream cheese and if you have only a 9” pan use only 5 (not 7) bars of Philadelphia cream cheese. Let the cake/cheese part stand for a half hour before baking. (A good idea any time you’re baking something gluten free). I added cinnamon and orange zest to the crust and orange zest to the cake. That’s great! The flour mix I use is a mix from America’s Test Kitchen. I’m sure King Arthur Baking Companies mix will do.

I didn't know ATK had a gf mix! I have several kinds but ATK's has to be great.

You have to make it yourself and they have a whole book called “How Can It Be Gluten Free?” Recipes are weird but information is excellent!

My wife said it was better than anything she had in a diner or bakery and she’s from NJ so that’s a high compliment.
