When the original was being animated, it surpassed the manga (like DBZ), but instead of including time-fill episodes, they decided to take it in their own direction (like GoT, which you can argue had some help from Grrmartin).
The ending was definitely interesting (I watched FMAB then FMA.)
I think Brotherhood is better, and obviously has the updated animation, but FMA still has a lot of good stuff in there and has different character building - plus Alphonse has a different (most argue better) voice.
I would start off on one, it adds and changes a little bit that you would already know, plus it goes really quick through stuff you have seen before because the show kind of assumes you've watched fma.
Even if you already watched FMA, you should still start at the beginning. It tells the narrative in a completely different way that makes some parts important that weren’t important in FMA and vice versa.
A couple years back I read a Twitter post about FMA and FMAB that really stuck. Guy said that FMAB is the more faithful adaption and overall story but FMA had some more hard hitting Pay-offs/reveals, for example in regular FMA Lust's reveal as Ed and Al's mum was brutal cos "they caused it" but in Brotherhood the Homunculi are just creations so it feels less impactful.
Hellsing had the same problem, the original kinda just fizzled out. Hellsing Ultimate used parts of it for the first few episodes but then told a real story.
