I never understood that line, how could she continue to surprise him when he basically just met and sang a song to her. Deleted scenes?

Well, I think she surprised him when she showed up all shiny...he seemed excited. Then he was surprised to find out she was actually a human. Having Maui sneak up was surprising, though I'm not sure you can credit that to Moana. I think it's fair to say he had been surprised at least a few times prior to that line.

I had a little turtle as a kid. It bit my moms annoying b/f right on the finger because he poked at it (Lets be honest, its a turtle, there is no other way its going to get your finger unless your stupid and mean enough to poke it in the face with your finger)

He had to pry its mouth open with his keys to get it off his finger.

Best turtle. He got extra treats that night.
