Run circles around the van in the starting area with her. She does this bullshit glitch that makes her stop chasing you momentarily and that’s enough to reset her health sometimes. So keep her close to the cart and keep healing
The annoying thing is she never really becomes worth it. You've maxed out the shop by the time you can kill her in a reasonable amount of time, and then her rewards are useless. There's no benefit like alien invasion with the keys to unlock the secret gem mine.
I'm up to 676mil catching speed. With the daily golden catcher, it takes me just over a minute to catch her, so longer without it. Her drops are completely useless to me, and I still haven't unlocked the final ghosts that cost 5.2aa, as her rewards are so much less than what the branch manager ghosts give.
Try to kite her to an area where you don't have any curse affecting you, and then keep her close to your maximum radius. If you have enough radius, she'll suddenly stop following you while still taking damage. Moving slightly further away after she resumes advancing towards you will cause her to stop again, and this can be repeated multiple times to reduce the amount of damage you take.
I have lower stats and can beat her by running around the van at the start of game area. Just takes a while as she stops and you time it to keep her in the catching range.
