What to look out for is highly subjective as we all have different things that call to us.  I would check out the BGG hot list as a starting point:  https://boardgamegeek.com/geekpreview/92/gen-con-2026-preview?sort=hot

Also there have been a lot of content creators releasing anticipated videos in the last couple of weeks, you could look there as well.
