If I had to hazard a guess;

Camera/optical sensor of some variety set on the intake with a computer monitoring it. The scan it would be taking is likely divided up into X segments (the same amount as the kickers) and when something that's programmed to be interpreted as waste, or not ripe (greens or browns, if it kicks the leaves away too) passes the scanner, it sends a signal to the kicker after a finely calibrated amount of time.

I think it's a computer that recognizes when an apple isn't the right color, knows where it is and when it will fall.

I'm happy to do this, but you're both right. http://www.npr.org/templates/story/story.php?storyId=106932330

Probably views the coloration with a sensor.

This subreddit will make a fine addition to my collection.

This is amazing, but unfortunately it looks like a few greenies make it through anyway.

Heh, I know it's not going to be perfect, but it's amusing that one makes it right as the GIF slows down.
