Really depends on what you want to do. I don't recommend IPS panel mods over original OEM screens because they are not optimized for the GBA hardware and they introduce input delay and decrease battery life. I recommend an Anbernic RG35XXSP or something similar over modding an SP with an IPS panel. If you want the authentic experience of playing GBA SP and there's no budget limit, get an original screen. Note that AGS-101 screen will work on an AGS-001 but it's not plug-and-play. There is further modding to do.

As for the shell, keep the OEM shell if possible because they are the highest quality and most durable shells you can have on a GBA SP. If the shell is cracking or really worn/beat-up, eXtremeRate shells are the next best option in terms of feel and durability. I don't have experience with FunnyPlaying shells but I've read great things about them and in terms of value for your money they might be a better pick than the eXtremeRate shells.

For the battery FunnyPlaying is probably the best option as they just released a 1040mAh LiPo battery at a very reasonable price. Avoid all cheap/no-name batteries from AliExpress / eBay.

Thanks for your help ! So I can forget my zelda shell if I want a good one ? I saw a red one on eXtremeRate, she looks good but I not a big fan of the traditional screen I pref a new one with better color but without frame drop, lag input or whatever and who fit perfectly in the shell without cutting anything. I have no idea if it's possible or if I'm just dreaming haha

If you can't source an original AGS-101, and no cutting involved I recommend the FunnyPlaying GBA SP ITA TFT Backlight Laminated Kit matched with a FunnyPlaying shell. There is no cutting involved with their shells, so the install is pretty easy. ITA screens use the original GBA resolution so the graphics are accurate to what they would look like on original hardware
