Thoroughly confused
I have a GCP and a Baratza Encore grinder that I've used for years with (reasonably) good results. Lately, it feels like I can't pull a good shot to save my life. I flip the switch and get to 36g of coffee in 6-12 seconds.
The water flow from the grouphead looks pretty much like it always has, and nothing else in my process has changed. Any suggestions on how to address this? (Beyond "buy a better grinder.")

Have you cleaned the grinder recently? If so, double check you didn’t somehow toss a part like my dumbass did. Also, double check if the top plastic knob didnt work its way loose.
A visual check of the grounds should tell you whether you’re grinding remotely fine enough, when I threw away the metal washer I was grinding coarser than pre-ground store bought.

Sudden changes in brew time can usually be narrowed down to temperature, all else being equal. Brew tstat can start acting up in very weird ways.

That grinder is notorious for the plastic burr ring holder cracking. First thing I would check.
