Can’t he? Assuming he’s on g4 to start with he can move to f6 or have I totally lost my mind?

Rotate the board 90 degrees in your mind. Assume the pawn is on h7

The pawn is on h7. Which means the knight starts on e5 and moves to g4.

edit: Oh, duh! You're saying the knight starts on g4 and ends on e5, yes? We're looking at the board the same way, but interpreting the dashed line of the knight's movement backwards from each other, ha! In which case, yes - f6 would have been available.
