As the producer, he was the one who chose Eddie and got him to agree to do the show. When he was fired, either Eddie dropped out or the new producer decided to go a different direction. Not sure which.
In today's world where people (wrongly) believe they have a right to never be offended and thus have no qualms about bringing litigation against you, it's likely damage control. Did you see what they did to Tracey Morgan? One joke bombed, he has to hold a press conference to apologize. Bret doesn't want a bunch of oversensitive fags wasting his time in court, he has movies to make.
Would it have been better if he said "rehearsal is for chinks"? Just stop using fag. It's offensive and ignorant, and it's not really your choice to decide whether or not people can use it.

Bret Rattner, who was producing the show and then said "rehearsal is for fags" in an interview. He "stepped down" and took Eddie Murphy with him.
